Marinated violet cauliflower & grilled vegetables in season - served with creamy avocado..

I fell in love in this awesome violet cauliflower the other day.
It's in season now, coming from less than 50km from Paris... Local food!


Super easy and pretty fast food to prepare. The marination of the cauliflower activates the natural enzymes in the vegetable making it easier to digest and make it more tasty - served together with grilled vegetables and avocado to combine all different kinds of textures and tastes.



Marinated cauliflower



1 Cauliflower
2 tbsp olive oil
herbal salt
optional spice; curcuma, chili or just black pepper..

Chop the cauliflower into small florets. In a bowl, add the olive oil and spices and with your hands mix it well so it's all well spread. Leave in the bowl to marinate over night or at least one hour.

 


Grilled veggies
1 Butternut squash
1 small turnip
1 tbsp olive oil
Himalayan salt & black pepper

1/2 avocado

Preheat oven to 175°C.
Peel the butternut squash and cut into smaller pieces and cut the turnip into small circles. 
Add coconut oil and spices and cook in oven for around 30 minutes.



Now, with your marinated cauliflower and your grilled vegetables, serve on a plate with creamy avocado - sprinkle some roasted pumpkin seeds on top and enjoy!
