Waking up, outside the first mornings of frost has begun to sparkle your early hours. The frosty snow angels has arrived.
As we pack up on the winter essentials like candles and warm winter clothes... our taste pallet starts to crave more comfort food that makes us feel warm and gooooood. In my last newsletter I made a list of my TOP winter tips for 'surviving' the winter with happiness, speaking with my Swedish part of my heart (subscribe to my newsletter here).
This recipe would totally go on my recipe list of winter essentials... Plus, it is so easy to make I would say count it in on fast-food, but for sure a super healthy version of it !
And about here my computer decided to crash... And also during this period, the summer has hit the coast in Basque Country and the snow angels has turned into sunshine angels a la 20°C. Crazy amazing. But don't worry, I will still share this soup recipe.. Lucky me that I saved pretty much everything on an extern hardrive, because everything was gone. So also, do not forget to back up your computer !

So HERE comes the promised soup recipe for you guys !
Broccoli & Zucchini Soup with Creamy Coconut & Wild Fennel Seeds
Recipe
2 - 4 servings
Ingredients:
1 Yellow onion
2 Cloves of garlic
1 Broccoli
2 Zucchini
250g Coconut Milk
A small bundle wild fennel seeds (best harvested in the late autumn)
Salt & black pepper
Cut the onions in smaller cubes. Heat a pan with some coconut oil or olive oil and add the onion and fry. Peel the cloves of garlic, press or cut in tiny pieces and add to the pan too.
Stir, and fry gently until golden.
Wash the broccoli and zucchini, cut in cubes and add to the pan. Put a lid on the pan and let cook on low temperature for about 10 minutes. The water from the vegetables will help to cook without adding water.
After 10 minutes, add water just enough to cover the veggies(do not put too much if you want the soup creamy , just enough to give it some more liquid to cook in).
And then add the can of coconut milk and heat to boil.
Take off the stove, and mix with a hand mixer until creamy.
Top with one teaspoon of wild fennel seeds.
Add salt & pepper for your taste,
done !
