Raw Gingerbread Cake


Raw Gingerbread Cake with a cup of Gatina Peaberry filter coffee from Belleville Brulerie.


I always loved gingerbread, the spices are just an awesome combination. There is a myth that says "gingerbread will make you kind", and they were actually sold as medicine in the 15th century. Fantastic - food has always been medicine!

These are not normal gingerbread. I created a healthier, more filling, and "less cooked" version.. but still with a taste of the gingerbread spices.

The ingredients are all natural. The dough is made by dates, almond flour, sesame seeds, pumpkin seeds and some water. The rest is the spices(cinnamon, cardamom, clove, ginger) and love.


Recipe

30 dates, soaked
100 grams hot water

400 grams pumpkin seeds
100 gram sesame seeds
200 gram almond flour
1 tbsp cardamom
2 tbsp cinnamon
2 tbsp ginger
2 tbsp clove
1 tbsp muscat

Soak the dates in hot water for 15 minutes. Take out the kernel and put the dates in a mixer together with 50 grams of the water and mix to a creamy texture. Now do the same thing with the seeds; mix them in the blender but leave some big pieces in the "powder" for a nice crunchy texture. Now, with your hands blend all the ingredients together into a dough. 
Spread it out on a baking paper, make it about 0,5-1 cm thick, and leave it in a form in the fridge for a couples of hours. 
Take out the form and make nice circles or optional forms of the dough. 
Done!
