Chocolate Chia Muffin - a healthy treat...

It's not impossible to make healthy, filling and sweet muffin rich in protein. Try this!


Recipe

Ingredients (makes 20 mini muffins and 8-10 large muffins)

1 tablespoon chia 
0,5 dl cup water

3 dl quinoa flakes
1,5 dl corn flour
1,5 dl almond flour
4 eggs 


1,5 dl olive oil
1 tbsp melted coconut oil
1/2 dl organic honey
1 dl cacao powder (I use a nice rich organic raw cacao)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon bourbon vanilla



Preheat oven to 175 C.  Prepare muffin cups/tray.
Soak chia in water. Mix dry ingredients in another powl. 
Next add all remaining ingredients together with chia, and blend until no small pieces remain.
Fill cups until 3/4 way full.  
Bake for 25-30 minutes for large cupcakes and 12-15 minutes for mini cupcakes or until inserted toothpick comes out clean.


Topping:
4 large medjool dates, pitted
3 tbsp cacao powder

Soak the dates 30 minutes. 
Mix the two ingredients, with some of the water into a mousse.



Add the topping on each muffin and serve!
