Recipe
2 servings
Ingredients:
1 zucchini (around 1-1,5 decimeter)
1/2 avocado
1/2 cucumber
1 handful green kale
fresh squeezed lemon
2 tbsp olive oil
1 tsp spirulina
a small bundle coriander
salt & pepper
cold filtered water
Peel cucumber if you prefer, or leave the skin on, as I do.
Wash and cut all vegetables in smaller pieces, and add one cup of water to start with. For the green kale, if you have a vitamix or other strong mixer you could mix it all - but for some the stem can be hard to blend, just try and if it's not working, save them and steam or eat raw!
Mix all the ingredients, until smooth and taste if you need to add more lemon, salt or pepper.
Serve with some fresh tomatoes or some nuts & seeds if you'd like.
