The Banana Cake


A while ago I posted this photo on my Instagram, from a weekend in La Rochelle when me and Lilian put up our Wild Kitchen menu at the Poet Festival. I promised I would share my banana cake recipe, so here it is.

Recipe


Ingredients
6 bananas, smashed
2 tablespoon coconut oil
2 teaspoon grounded bourbon vanilla
2 teaspoon grounded cinnamon
2 egg
2 tablespoon honey or maple syrup
2 teaspoon baking powder
2 pinch salt
300g almond flour
50g coconut flakes
60g buckwheat flour

Preheat the oven to 175 degrees C.
With a fork, mix the coconut oil into the mashed bananas in a large mixing bowl. Save two thin & long banana pieces to decorate in the end, if you want.
Mix in the egg, vanilla powder and the agave syrup. Sprinkle the baking soda and the salt over the mixture and mix in. Add the flour last, mix.
Butter a 25 x 10 cm large loaf pan with coconut oil.
Add the dough, spread it in the loaf pan and add the two banana pieces on top and bake for 30-40 minutes.
