Wild Raspberry & Coconut Smoothie with Vanilla





It is summer season and high berry season and here in Sweden the berries are so many ! Berries is my favorite, plus they are super healthy and contains less sugar than fruit. Did you know black currants are one of the most antioxidant rich food in the world ?

It is for sure time to enjoy them, and take care of the berries before they fall to the ground.
We went picking wild raspberries (yes wild - they grow all over, in the forest, on the side of the road, in the fields.. you name it)the other day.
They got a bit smashed on our way back on the bike (we had about half a liter of them) so I decided to make a smoothie for breakfast.


Here is the simple recipe:

Wild Raspberry & Coconut Smoothie with Vanilla
Recipe makes two big servings

300-400g Wild Raspberries
300ml Coconut cream
1tsp Vanilla Bourboun


Mix all the ingredients in a blender, and it is ready.
Serve it with some granola and you have a super breakfast !
