Hello dear, I will be very honest and tell you a secret.Now here is the recipe:
People sometime laugh when I tell them we will make "cauliflower pizza", or "black bean brownie"... It is true. They are not excited as I am every time. Some how it seems that a sugary / wheat based dish is less frightening to some. Something about the beans and cabbage family makes some people scared about the outcome - bloated stomach and embarrassing farting.
Well, I tell you what, good news! : first of all a black bean brownie baked with love will fill you up faster than a normal brownie that you probably can eat maybe three or more pieces of.. And it doesn't get you more bloated than any other dessert. In fact in the long run eating plant based food will support your digestion and your natural enzymes with fibers, protein and vital nutrition.
And second: there are plenty of amazing herbal teas for bloated stomach or digestion if you have a problem with that in general - herbal teas is something everyone should have in their home.
So the outcome is - more fibers, proteins and plant based food for the people ! ;)
Vegan Black Bean Brownies with Coconut
Quantity : 9-12 brownies
Ingredients:
20 dates, preferably soaked five hours
250g cooked black beans (after draining)
2 tbsp cacao powder
40g coconut flakes (or oat flakes if you prefer)
1/4 tsp salt
40g coconut oil
2 tsp pure vanilla extract
1/2 tsp baking powder
140g chocolate chips
Baking form 8x8 cm
Food Processor
Optional: Edible flowers(Marshmallow flowers on the photo),
extra chocolate chip for the top
Instructions:
Preheat the oven to 175°c. Take out the seeds in the soaked dates, and put them in a food processor and mix well. Add all the ingredients except the chocolate chips and blend until completely smooth. Stir in the chocolate chips in the preparation. Oil the baking form with some coconut oil and pour the mixture in it. Option: add some extra chocolate chips over the top. Cook 11-14 minutes, and then let cool before serving. When you take it out from the oven, it is normal if the texture still is very soft and a bit "undercooked". The brownie will firm up magically when you let it cool and give it the creamy texture you want. Serve with some edible flowers.
