You know, somehow breakfast muffins or like breakfast banana bread just even sounds so delicious. Such a comfort food and filled with mouthwatering tastes.. To be honest I don't do muffins very often, and banana bread - yes when the occasion is there.
For this recipe, I just wanted to have some kind of good mix of a cookie shape, scone feeling and muffin texture.
So you can eat it just like it is, or add some nut butter on top and eat it like a bread.
And, I am kind of pleased with this super result.... Let me introduce you to my BREAKFAST BUN !
So easy, and soooo filling...

Ingredients:
0,2 liter / 2dl / 0,8 cups buckwheat flour
0,15 liter / 1,5dl / 0,6 cups almond flour
0,2 liter / 2dl / 0,8 cups oat flakes
100 ml / 1dl / 0,4 cups plant milk (i used oat milk )
0,1 / 1 dl / 0,4 cups liter coconut sugar
1 tsp baking powder
1 pinch salt
7 dried apricots
+ I used my food processor to mix everything
Preheat the oven to 175°c.
Start with mixing the egg in the food processor (if not by hand or with a mixer).
Add the rest of the ingredients and mix around 1-2 minutes until well mixed.
Prepare 4 muffin forms on a baking plate.
With help of two spoons, take a quit big amount of the dough and place in the muffin form.
I like that they look hand made and not perfect shape, so I leave them like this.
Bake in the oven about 35 minutes until baked, but not too dry.
