| I am enjoying my holiday in the peaceful countryside in Sweden. This is what I started my day with this morning. |
This smoothie recipe combines antioxidants, fibers, vitamins, minerals, healthy fats and iron in a delicious way;
Recipe
2 servings
1 tablespoon pumpkin seeds, soaked over night (the soaking gives the seeds a more smooth texture and also easier to digest)
1/2 avocado
1 handful of spinach
1/2 mango, peeled and cut
1 dl buckthorn
2 dl oat milk (optional; water, almond milk etc.)
Roasted coconut flakes on top
Night before: put the pumpkin seeds in a bowl with three times water.
Morning: Peel the mango, and cut into smaller pieces. Add all the ingredients in your blender and mix. Serve with some coconut flakes on top.
