| Banana & Almond Cookies with Coconut by Lina Bou, Nutritional Therapist, phyto therapist, freelance cook. |
So this is when I was planning to have a rest from cooking after five days non stop in the kitchen..
But like as anything creative for me: it makes me so happy and relaxed!
Anyway, inspired by my ongoing detox.. Such a cliche , I know.. But it is true that especially this time of the year it is good to give a rest from stimulants like coffee, sugars, gluten, dairy, tea, etc. And help with cleansing herbs to really give your body the deepest rest and to renew energy for the new season that is coming.
Today I was reading a bit about our 'relationship' to sugar = glucose (can highly recommend the book 'whole detox' by Dr Deanna Minich), and it is kind of crazy today. Our bodies are very aware of that the sugar = energy. So of course, we LOVE it. But when it is too accessible and over consumed... Let's just say that it is 'not good' for now, to focus on the good stuff with this blog post!
Conclusion is - there are natural way's to have a sweet treat !
So here is my 'treat', after 5 days detox(gonna continue 10 days more for pleasure), and five days hard working.. Tasted really good !
Recipe
Serves 6
Time prep + cooking 15min
Heat the oven to 150°C.
Mix
2 bananas
1 egg
1 tbsp coconut oil.
In a kitchen aid/vitamix.
Add
1cup of almonds.
Mix just a few seconds, on "pulse mode" so the almonds just get crushed and not into flour.
In another bowl :
Add 1 tsp baking powder
1/2 cup coconut flour,
1/2 cup buckwheat flour,
1/2 cup cacao powder
Mix all together and form into cookies with your hands.
It makes 6 big ones or 12 small.
Bake for 10 minutes.
Done !
Enjoy !
