Pumpkin & Almond Muffins with Coconut Orange Topping
makes 10 muffins
Dry ingredients
60 g almond flour
35 g fine coconut flour
100 g buckwheat flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp muscat
1/2 tsp ground ginger
1/2 tsp vanilla extract/ground vanilla
1 pinch sea salt
70g chopped almonds
Wet ingredients
240g pumpkin puree
1/2 organic orange, juice and zest
2 organic eggs
100 ml extra virgin olive oil
250 ml coconut milk
5 tbsp maple syrup
Topping
100g pumpkin puree
1 organic orange, juice
150ml coconut milk
2tbsp maple syrup
1 tsp agar agar powder
Preheat oven to 200°c.
Split the pumpkin in two pieces with a sharp knife, and bake in the oven for about 30-40 minutes, depending on how big your pumpkin is. When it is ready, the skin is bubbly and a bit brown.
Take out and with a spoon, scoop out the pumpkin meat, and mix into a purée with a blender or food processor.
You will probably not use all of the pumpkin purée for the recipe, but you can save it in the fridge for other recipes - like my pumpkin spice smoothie for example !
Now lower the oven to 180°C.
In a bowl, add all the dry ingredients together and mix with a spoon.
In another bowl, beat the eggs for about 1-2 minutes and then add the rest of the wet ingredients.
Continue to stir all the time while adding the rest of the ingredients together for a creamy mixture. When all the dry and wet ingredients are well combined, you can add the almonds, and gently stirring with a spatula.

Prepare a muffin pan with paper liners, or use other muffin forms if you have.
Add the batter to the forms, about 1-2 spoons in each muffin.
Bake for 15-20 minutes until they are baked through.
Meanwhile, prepare the topping.
Mix all the ingredients in a blender, until well combined. Put in a glass jar and leave to sit for about one hour.
When the muffin is ready, take out and let it cool down.
When time to serve, add the topping on each muffin and sprinkle some almonds on top !
